What You’re Growing
Carolina Reaper peppers are the benchmark for extreme heat. The plants grow into strong, bushy producers that churn out aggressively bumpy pods, often finished with signature scorpion-like stinger tails.
Beyond the heat, Reapers have a surprisingly fruity flavour that appears briefly before the burn takes over. They’re a favourite among extreme chilli enthusiasts, collectors, and hot sauce makers pushing the limits of heat.
This is not just a pepper — it’s a legend.
Heat + Best Uses
This is top-tier, extreme superhot heat.
Carolina Reaper delivers an immediate, explosive burn that builds fast and lingers relentlessly.
Best uses include:
ultra-hot sauces and fermented mashes
powdering for extreme heat seasoning
micro-dosing into chilli, stews, or curries
infused oils or vinegars (extreme caution)
drying for flakes or powder
Only the tiniest amount should ever be used.
How to Grow Carolina Reaper in Ontario/Canada
Reaper varieties require patience, warmth, and a strong indoor start — especially in Canadian climates.
1) Start seeds indoors
Start seeds 10–12 weeks before last frost (March–early April in much of Ontario).
Use a heat mat for best germination rates.
Provide strong, consistent light immediately after sprouting.
2) Transplant timing
Transplant outdoors only once all frost risk is gone and nighttime temperatures stay warm.
Harden off plants gradually over 7–10 days.
3) Sun + soil
Full sun is mandatory for pod development and maximum heat.
Use rich, well-draining soil and water deeply but consistently.
4) Give it space
Plants grow bushy and heavy with fruit.
Large containers or in-ground planting are ideal.
Staking or cages are strongly recommended once pods set.
Harvest Tips
Harvest when peppers turn fully deep red — this is peak heat and flavour.
Green pods are edible but significantly milder and less flavourful.
Always wear gloves when harvesting and handling — Carolina Reaper oils are extremely potent.
